As much as I love to occasionally go to Chipotle, what I love even more is to bring it to my kitchen. One of my favorite meals is a homemade burrito bowl because it is full of fresh ingredients and you can change it up anytime by experimenting with different ingredients! Here is my go-to ground turkey burrito bowl recipe to make for my family. You can also use this recipe (or double it) and prepare it ahead of time to store in the fridge for the week. Freeze individual portions of the meat, rice, beans, corn, and peppers if you're unable to consume within 2-3 days. If you have limited time to cook, opt for a single guacamole cup, pre-made pico de gallo, and instant brown rice! The nutrition facts for this recipe are included at the very bottom of this page.

Ingredients: Makes about 5 servings
1 lb Ground Turkey
~ 1.5 - 2 Tbsp Olive or Avocado oil
2 ½ cups Brown or Wild Rice (cooked)
1 15 oz can of Black Beans (drained)
1 15 oz can of Corn
1 Red Pepper (sliced)
Lettuce
Pico de gallo (store bought or homemade)
Guacamole (store bought or homemade)

Seasonings for Ground Turkey:
1 Tbsp Chili powder
1 Tbsp Cumin
½ tsp Garlic Power
¼ tsp Dried Oregano
¼ tsp Onion Powder
¼ tsp Black Pepper
Optional: ½ -1 tsp Paprika
Directions for Burrito Bowl:
Wash head of lettuce. Slice or rip lettuce into small pieces. Put to the side.
Rice options: Cook rice of choice in water on the stove or cook a cup of instant rice in the microwave, following the directions on the package.
Wash and slice 1 red pepper into ½ inch slices. Put ~ 1-2 tsp of olive or avocado oil in a small skillet. Cook pepper slices over low to medium heat until they reach your desired temperature.
In a large skillet, bring ~1 tbsp of olive or avocado oil to medium heat. Add 1 lb of ground turkey to the skillet and begin to evenly mix it with the oil. Add seasonings to turkey and continue to mix. Place cover over skillet, let sit for 1-2 minutes, and mix it again. Continue until the turkey is browned evenly or until it reaches an internal temperature of 165 degrees F (74 °C).
While the turkey and peppers are cooking, open a can of corn and a can of black beans. In a small pan, cook corn over low to medium heat. While the corn is cooking, rinse black beans in a strainer and pour into a microwave safe bowl (optional: add seasonings of choice). Cook for 30 seconds, stir, and then cook in 30 second bursts until they reach your desired temperature.
Make your bowl using the ingredients in whichever order you prefer. I like to make my bowl in this order, starting with rice on the bottom of the bowl:
Rice
Ground turkey
Black beans
Corn
Sliced red peppers
Shredded lettuce
Pico de gallo
Guacamole
Homemade Guacamole (optional)
2-3 Avocados
2-4 Tbsp White Onion (diced)
2-4 Tbsp Roma or Cherry Tomatoes (diced)
½ Lime
Salt and Black Pepper to taste
Directions for homemade guacamole:
Slice avocados in half, remove the pit, and scoop into a small or medium sized mixing bowl.
Mash the avocados using a fork or potato masher.
Mix in diced white onions and tomatoes.
Add lime juice, salt, and black pepper to taste. Continue to mix.
Homemade Pico De Gallo (optional)
½ large White Onion (diced)
2 cups Roma or Cherry tomatoes (diced)
½ cup Cilantro (chopped)
Optional: 1-2 Jalapeno Peppers (seeds removed + minced)
½ Lime
Salt to taste
Directions for homemade pico de gallo:
In a medium sized bowl, combine diced tomato, white onion, cilantro, and jalapeno.
Mix together ingredients, lime juice, and salt. Taste, and add more lime juice and salt until you reach the desired taste.
1 Serving (1 bowl):
½ cup (3 oz) Ground Turkey
½ cup cooked Rice
¼ cup Black Beans
¼ cup Corn
Red Pepper slices
Shredded Lettuce
2 tbsp Pico de gallo
1-2 tbsp Guacamole
