CocOatmeal

Updated: Mar 30, 2020

Start off your 2020 right with a new oatmeal recipe! I call this one CocOatmeal because you add 2 tablespoons of unsweetened cocoa powder in the oatmeal. It is a balanced meal and also vegan friendly!

If you cook this on the stove top, then add the cocoa powder to the pan while you still have some liquid left (about 5 minutes into cooking the oatmeal at a simmer). Then mix well and simmer for about 2 more minutes. You can then add the remaining ingredients - peanut butter, cinnamon, maple syrup and milk.

If you'd like to microwave the oatmeal, then you pretty much do the same thing as above. Add the cocoa powder while you still have some liquid in the bowl, mix it well and finish microwaving until most of the liquid is gone. Depending on what type of oats you use (rolled, steel cut, etc) this can take 3-10 minutes total in the microwave. Then top with remaining ingredients.

You can also make this as overnight oats. Make sure to use rolled oats. Add all ingredients to a sealed jar or container. Shake or stir very well and refrigerate overnight (or for at least 2 hours). Room temperature natural peanut butter (peanuts, salt) with mix better than other peanut butters.

This recipe will keep you full and happy because your oatmeal will no longer be boring!
